How did Willibrew begin?
The concept of Willibrew began while I was attending UCONN and  began home brewing. In 1991 my ex-wife and I opened a deli/coffee/ Ice cream shop in the former Capital theater in Willimantic. While still home brewing we moved to a location across the street and began serving craft beers in 1994 as a restaurant and beer bar. Finally in 1997 we opened in the historic U.S. Post Office at 967 Main Street where we are celebrating our 21st anniversary as a restaurant brewery.

What is the signature of your beer?
We brew beers that cover many of the traditional styles which are always popular. However, being a restaurant and brewery our ability to incorporate unique and local ingredients offers our guest an ever changing palate to explore.

What is your favorite thing about beer?
I LOVE BEER! The diversity of malts, hops, yeast and other ingredients gives us a creative approach in fulfilling an historic, healthy, tradition for thousands of years!
